Hearty Lamb Shank Stew
Slow cooking delicious heart healthy lamb shank stew, great for the whole family by Bronwyn.
4-6 Servings
4 hours of prep and cook time
Ingredients:
4lbs shanks
2 quarts water or bone broth
2 tbsp beef or lamb tallow
1 large onion, chopped
1 whole head of garlic, diced
Handful parsley and handful cilantro
4 medium potatoes, cut chunky
5 large carrots, cut chunky
Directions:
Pat shanks dry, then season all sides with salt, pepper, and ground coriander (or another spice you like)
Melt tallow in dutch oven or heavy bottomed stew pot
Brown all sides of shanks in tallow, then set shanks aside
Caamelize onions in tallow and shank drippings, then add garlic till lightly browned
Add shanks back to pot
Pour in water or bone broth, heat to boiling
Once boiling, reduce to simmer
Add parsley
Simmer on stove or in 350 degrees Farenheit oven for 3 hours
Add carrots and potatoes
Simmer for another hour or so
Serve with fresh parsley or cilantro on top
